Chicken Fried Riced Cauliflower

Here is the recipe that was demonstrated on Fox4kc on Friday, February 22nd.

1-2 bags of Riced Cauliflower (depending on the family size)

1 bag of Tyson’s Grilled Chicken Strips

2 eggs

1 bag of frozen peas and carrots or bag of stir fry vegetables

Coconut or sesame seed oil

1/2 of medium Vidalia onion cut in small pieces or green onions

3/4 cup of soy sauce

3/4 sesame seed oil

Salt and pepper to taste

2 tablespoons of minced garlic

Turn on skillet and place coconut or sesame seed oil to coat pan.  Empty the bags of riced cauliflower, peas and carrots and onion into an electric skillet or regular cast iron skillet stirring often to cook until tender.  While these items are cooking, push the fried chicken cauliflower rice mixture to one side of the skillet and pour the eggs into the empty side of the pan then scramble. Once the eggs are mostly scrambled, break up with a spatula and combine with the rice mixture. Place 8-10 chicken strips in a bowl and place in microwave for 2 minutes to unthaw.  Remove and cut strips into smaller pieces and add to skillet mixture stirring thoroughly.   Add soy sauce, minced garlic, salt and pepper and continue to stir thoroughly.

Add salsa or siracha sauce for added flavor and heat.  This recipe was created to be Bari easy for you to make it count!!!!!
