Black Bean Pasta

Black Bean Pasta

  • 1 bag of black bean pasta
  • 6-8 cherry tomatoes
  • 1/2 cup of bell pepper and onions mixture
  • 2 tsp. of chives
  • 2 tsp. of toasted sesame seeds
  • 1 cup of spinach
  • 1 tbsp. of Italian herbs
  • 1 cup of sunflower oil
  • 1/2 cup of pomegranate vinaigrette
  • 1 tsp. of white pepper


Cook pasta according to bag instructions. While pasta is cooking, in a bowl chop up bell/onion, tomatoes, spinach. Add sesame chives, sesame seeds, herbs, oil, vinaigrette, and white pepper. Mix thoroughly. When pasta is tender, remove from heat, drain hot water, rinse in cool water then rinse water off of pasta as well. Allow pasta to cool then mix pasta in with vegetable mixture. Place bowl in refrigerator for 30 minutes and serve chilled. Stir before serving.
