Swai Delight

  • 2 Swai fillets
  • Sunflower or toasted Sesame Seed oil
  • The BariGirls seasoning (basic, sweet or spicy)
  • Italian Herbs seasoning
  • 1 cup of chopped red onions
  • 1 cup of spinach
  • 1 cup of Tri-colored Quinoa
    2 pieces of flatbread
    Side of mixed fruit

Instructions

Rinse off chicken tenderloins, place cookie sheet placing and separate, so they are not touching and in a single layer.  Bake chicken in a 400 degrees oven for 30-35 minutes.  Remove and let cool.  When cool, place 2-3 pieces in a food processor or blender to mince.  Remove minced pieces and continue to all chicken is minced and place in a bowl.  Combine chopped spinach, onion, garlic, herbs, seasoning, peppers, and eggs and mix thoroughly.  Gather a palm-size amount and mold it into a patty.  Oil griddle or electric skillet and turn to medium to high heat.  Place patty in skillet or griddle and cook for 4 minutes on each side.  Place on bun or two pieces of bok choy lettuce and your choice of condiments. Enjoy.
