Here is Shane’s story:
I stepped on the scale for the first time in many months in the summer of 2008. I knew it wasn’t going to be pretty; I had been breathing heavier and watching my stomach grow for some time. However, I was not prepared for the number presented before me. To say it was shocking would be an understatement. That’s all it took, the same day I began researching healthy foods and got on my stationary bike (hoping it would hold my newly acquired weight) and pedaled like my life depended on it. I began to learn the difference between simple and complex carbohydrates. I learned about foods that help aid digestion, such as sour kraut and kimchi. I started to sprout nuts and legumes, which also aid in digestion and help your body to absorb the most nutrients foods have to offer. The weight began falling off and over the course of 1.5 years I had lost 120 lbs. I had reached the healthiest point in my life at the age of 29 and had completely eliminated all animal products from my diet. Now, seven years later and after adopting a vegan lifestyle, I have more energy than ever before. I believe different methods help different people. My best advice is to listen to your body. Pay attention to how you feel after you eat certain meals. What foods give you more energy? Which leave you feeling more lethargic? Food can alter us physically, emotionally and spiritually. It’s up to us if we want food to fight for us, or against us.
