The BariGirls Million Dollar Chicken Casserole Using AE Dairy Cottage Cheese with Chives!!!!!

MILLION DOLLAR CHICKEN CASSEROLE WITH AE DAIRY COTTAGE CHEESE

10½ oz can of cream of chicken soup

2 oz low fat cream cheese, softened

¾ cup AE Cottage Cheese with Chives

½ cup sour cream

1 tsp onion powder

1 tsp garlic powder

1 red onion, thinly sliced (1/2 cup)

4½ cup shredded cooked chicken (from 1 large whole rotisserie chicken)

2 Tbsp finely chopped fresh parsley

1½ cup crushed cheerios

½ cup (4 oz) unsalted butter, melted

1 tsp chopped fresh thyme

Hot cooked brown rice

Preheat oven to 350 degrees.  Stir together cream of chicken soup, cream cheese, cottage cheese, sour cream, onion powder and garlic powder in a large bowl until well combined.

Add onions, chicken and parsley into cottage cheese mixture until evenly coated.  In a medium bowl, stir together cheerios, butter and thyme until well coated.  Set aside.  Spoon chicken mixture evenly into an ungreased 11×7 baking dish.  Sprinkle evenly with cracker mixture.

Bake in a preheated oven until edges are bubbly and crackers are golden brown, 30 to 35 minutes.  Serve over rice.
