1 tbsp canola oil
2-3 cups of baby spinach leaves with stems removed
1/4 BariGirls Sweet Blend seasoning
3 tbsp Nutritional Yeast
2 cups shredded red cabbage
1 medium carrot, shredded
1 15 ounce can white beans rinsed
1 ripe avocado
1/4 cup of TVP (textured vegetable protein)
4 8- to 10-inch protein or wheat wraps or tortillas
Peanut sauce or dipping sauce of your choice
In a mincer, add canola oil, white beans, avocado and blend until pureed. Add nutritional yeast, sweet seasoning and blend until combined. Remove from mincer and place in large mixing bowl.
In a cast iron skillet or electric skillet, heat 1-2 tablespoon of olive oil or oil of your choice, over medium heat brown each side of tortilla lightly and remove and set aside. To assemble the wraps, use a spatula to spread about 1/2 cup of the bean-avocado mixture onto a wrap (or tortilla) and top with red cabbage, carrot and spinach. Roll up and repeat with remaining ingredients. Cut the wraps in half to serve with dipping sauce.
